蔬菜硝酸盐分布规律及其转化机理

摘    要:不同种类蔬菜,硝酸盐含量以根菜类和叶菜类含量最高,茄果类、豆类和食用菌类含量最低;同种蔬菜不同年龄,年龄小的蔬菜硝酸盐含量高于年龄大的;同种蔬菜不同部位,硝酸盐含量为根>茎>叶柄>叶片。硝酸盐经硝酸还原酶作用,生成亚硝酸盐,亚硝酸盐经亚硝基化作用生成亚硝胺,这是一种强烈的致癌物。

Abstract:The contents of nitrate in the root-and leaf-vegetables arc maximum among various species, and the frui-, tbcan-vegetables and edible fungi arc minimum. Among various ages of the vegetables, the amount of nitrate is higher in young vegetables than in old ones. The accumulation of nitrate in the different parts of the vegetable will show as follows: root> stcm> pctiolc> blade. Nitrate can be changed into nitrite by the nitrate rcductasc. By the nitrition, nitrite can be turned into amine nitrite, which is a strongly kind of carcinogen.
