食醋中乙醇含量的测定

摘    要:文章采用顶空气相色谱法,对多种市售食醋中的乙醇进行了定量分析。方法是在保留时间定性的基础上,用单点校正法进行定量。结果显示,在所测定的食醋样品中乙醇的含量一般在1.19mg/mL~3.37mg/mL之间,实验的相对标准偏差为1.4%~9.7%,回收率为91.0%~104.9%。为研究各种食醋的香气成分提供了简便、可靠的检测方法。

Abstract:The content of alcohol in many vinegar samples on the market was determined by headspace gas chromatography.The qualitative method was the retention time.And the quantitative method of single-point correction was used to calculate the content of alcohol in vinegar.The results showed that the content of alcohol in vinegar samples was between 1.19mg/mL and 3.37mg/mL.The relative standard deviation was 1.4%~9.7%,and the recovery was from 91.0% to 104.9%.A simple and convenient method was provided for the determination of fragrance compositions' content in different kinds of vinegar samples.
