阐述了方便面的水分含量及含油量是影响方便面品质的两个重要因素,研究了油炸时间和温度对方便面水分含量及含油量的影响.结果表明:油炸时间越长、油炸温度越高,面饼失水程度越大,含油量越高.说明油炸时间和温度对面饼中水分含量及含油量的影响是相互关联、存在一定的相关性的.  相似文献

为探究风味物质与不良因子的相关性,检测了油炸薯片、油炸方便面面饼、麻花、咸味花生米4种常见方便食品共16个样本的挥发性风味物质以及不良因子丙烯酰胺、多环芳烃和反式脂肪酸的含量,探讨了油炸方便面面饼风味物质和不良因子间的相关性。采用固相微萃取/气相色谱-质谱联用分析,基于NIST 2015谱库检索和核对保留指数的方法鉴定出含氮杂环化合物、含氧杂环化合物、醛类、羧酸类、酮类、酯类、烷烃类和其他类化合物等共78种挥发性风味物质。所有样品中均未检出反式脂肪酸,油炸薯片和油炸方便面面饼中检测出苊、蒽、 艹屈 、荧蒽、芴、菲、芘等7种多环芳烃及丙烯酰胺。比较4种食品,油炸薯片中检测到的吡嗪类化合物及丙烯酰胺含量较高,油炸方便面面饼中羧酸类化合物及多环芳烃含量较高,麻花和咸味花生米中脂肪醛类化合物和含氧杂环化合物含量较高。偏最小二乘回归分析油炸方便面面饼风味物质和不良因子间的相关性,发现丙烯酰胺含量与可来自美拉德反应的吡嗪、甲基吡嗪等化合物的含量呈显著正相关(P<0.05),多环芳烃含量主要与可来自油炸或烘烤过程中脂肪氧化降解的醛类、酸类等化合物的含量呈显著正相关(P<0.05)。研究结果表明,选择适当的食品加工工艺条件可同时兼顾喜好风味的形成和食品安全性,具有重要意义。  相似文献

以鱼腥草为原料,采用食品油炸技术,研究了鱼腥草油炸休闲食品的生产工艺及其关键环节的控制.结果表明,新鲜鱼腥草洗净切段,沸水热烫1.0 min,用70℃的温度进行鼓风干燥120 min,然后在180℃的油炸温度下油炸2.0 min,经脱油、调味、冷却后真空包装.该产品具有酥脆、略有鱼腥草风味等特点.  相似文献

阐述了辣椒香味物质的生成机理,采用L9(3,4)正交设计,选取干辣椒油炸温度、油炸时间以及辣椒和油的比例三因素三水平,针对实验得到的9组数据进行感官品评,通过正交实验结果分析和方差分析得出方便面"油辣子"制作工艺优化条件为油温155,℃,炸制时间80,s,辣椒与油的比例为1∶6,其中油炸温度对辣椒油的风味影响最为显著,其次是油炸时间,为今后产品开发和精进提供了参考依据。  相似文献

实验研究污油超声破乳脱水过程的主要影响因素,包括温度、热沉降时间、超声声强、辐照时间等.超声波辐照能有效促进污油破乳脱水.实验结果表明,对于初始含水为5%~6%的某石化厂污油,加入375 μg/g破乳剂NS-21,以10 kHz驻波场、声强0.7 W/cm2辐照5 min,70 ℃沉降2 h时能取得最佳脱水效果,脱水率达到91.7%.对于初始含水75%的某炼厂的难破乳、高含水污油,采用超声破乳技术后,无需添加破乳剂,仅热沉降后脱水率就高达86.7%,污油体积减小65%,极大地降低了库容.  相似文献

目的:探索含挥发油植物的透射电镜样品制备技术。方法:通过比较影响超薄切片质量的条件,找出最佳制片条件。结果:试剂pH为6.7~7.0、锇酸固定7d、脱水时间为30~45 min、多级梯度浸透并延长浸透时间的情况下,可获得最佳切片效果。结论:植物样品的透射电镜制样技术要考查植物本身的特性,根据其自身特点,合理调节超薄切片各环节。  相似文献

研究莱豆真空油炸的工艺特性,包括:油炸温度、真空度、时间和冷冻速率等对特色营养成分大豆异黄酮的保存和产品感观品质的影响,提出将真空油炸技术应用于香酥莱豆产品的加工,采用正交试验筛选真空油炸工艺条件。所选出的最佳工艺条件为:真空度0.085Mpa,油炸温度110℃,油炸时间15min,冷冻速率-2.5℃/h。按此生产的产品品质明显优于常压油炸产品,并且大豆异黄酮保存率比常压油炸产品高3倍,产品理化和卫生指标符合食品卫生标准,保质期12个月。  相似文献

The Williston Basin is a significant petroleum province, containing oil production zones that include the Middle Cambrian to Lower Ordovician, Upper Ordovician, Middle Devonian, Upper Devonian and Mississippian and within the Jurassic and Cretaceous. The oils of the Williston Basin exhibit a wide range of geochemical characteristics defined as "oil families", although the geochemical signature of the Cambrian Deadwood Formation and Lower Ordovician Winnipeg reservoired oils does not match any "oil family". Despite their close stratigraphic proximity, it is evident that the oils of the Lower Palaeozoic within the Williston Basin are distinct. This suggests the presence of a new "oil family" within the Williston Basin. Diagnostic geochemical signatures occur in the gasoline range chromatograms, within saturate fraction gas chromatograms and biomarker fingerprints. However, some of the established criteria and cross-plots that are currently used to segregate oils into distinct genetic families within the basin do not always meet with success, particularly when applied to the Lower Palaeozoic oils of the Deadwood and Winnipeg Formation.  相似文献

The discovery of the prolific Ordovician Red River reservoirs in 1995 in southeastern Saskatchewan was the catalyst for extensive exploration activity which resulted in the discovery of more than 15 new Red River pools. The best yields of Red River production to date have been from dolomite reservoirs. Understanding the processes of dolomitization is, therefore, crucial for the prediction of the connectivity, spatial distribution and heterogeneity of dolomite reservoirs.The Red River reservoirs in the Midale area consist of 3~4 thin dolomitized zones, with a total thickness of about 20 m, which occur at the top of the Yeoman Formation. Two types of replacement dolomite were recognized in the Red River reservoir: dolomitized burrow infills and dolomitized host matrix. The spatial distribution of dolomite suggests that burrowing organisms played an important role in facilitating the fluid flow in the backfilled sediments. This resulted in penecontemporaneous dolomitization of burrow infills by normal seawater. The dolomite in the host matrix is interpreted as having occurred at shallow burial by evaporitic seawater during precipitation of Lake Almar anhydrite that immediately overlies the Yeoman Formation. However, the low δ18O values of dolomited burrow infills (-5.9‰~ -7.8‰, PDB) and matrix dolomites (-6.6‰~ -8.1‰, avg. -7.4‰ PDB) compared to the estimated values for the late Ordovician marine dolomite could be attributed to modification and alteration of dolomite at higher temperatures during deeper burial, which could also be responsible for its 87Sr/86Sr ratios (0.7084~0.7088) that are higher than suggested for the late Ordovician seawaters (0.7078~0.7080). The trace amounts of saddle dolomite cement in the Red River carbonates are probably related to "cannibalization" of earlier replacement dolomite during the chemical compaction.  相似文献

以AC-13级配为基础,将橡胶颗粒代替部分集料掺入混合料中,以低温弯曲试验为评价方法对不同橡胶颗粒掺量下沥青混合料的低温抗裂性进行研究,并引入应变能密度值对混合料的低温抗裂性进行综合评价.试验结果表明:橡胶颗粒沥青混合料试件的破坏微应变均超过2 300,满足冬寒区的技术指标;无论是否掺加橡胶颗粒,随着温度的下降,沥青混合料破坏时的最大弯拉强度增大,弯拉应变降低,劲度模量增大;弯曲应变能密度在胶粒掺量为1%左右时具有较大的弯曲应变能密度值,此时橡胶颗粒沥青混合料具有较好的低温抗裂性.  相似文献

理论推导与室内实验相结合,建立了低渗透非均质砂岩油藏启动压力梯度确定方法。首先借助油藏流场与电场相似的原理,推导了非均质砂岩油藏启动压力梯度计算公式。其次基于稳定流实验方法,建立了非均质砂岩油藏启动压力梯度测试方法。结果表明:低渗透非均质砂岩油藏的启动压力梯度确定遵循两个等效原则。平面非均质油藏的启动压力梯度等于各级渗透率段的启动压力梯度关于长度的加权平均;纵向非均质油藏的启动压力梯度等于各渗透率层的启动压力梯度关于渗透率与渗流面积乘积的加权平均。研究成果可用于有效指导低渗透非均质砂岩油藏的合理井距确定,促进该类油藏的高效开发。  相似文献
