| 摘 要： | 测定了芜湖市七种叶菜类蔬菜硝酸盐及亚硝酸盐含量．结果表明不同蔬菜对硝酸盐的富集能力不同，同种蔬菜不同部位硝酸盐及亚硝酸盐含量不同．根据WHO／FAO规定的硝酸盐、亚硝酸盐日允许摄入量换算得到的标准及中国2001年10月施行的绿色蔬菜质量标准，蔬菜样本中香菜、菠菜、生菜污染严重．
