青梅果采后软化过程中理化指标间关系的研究

摘    要:对青梅(Prunus,mume Sieb.et Zucc.cv.Daqing)采后20个生理生化指标的变化,用生物数学的方法进行综合分析研究得出,梅果的硬度与可溶性固形物(TSS)、可滴定酸、螯合剂可溶果胶(CSP)、碳酸钠可溶果胶(SSP)、4N KOH可溶组分和4N KOH不溶组分含量正向直线相关;与多聚半乳糖醛酸酶(PG)、纤维素酶(Cx)、呼吸速率、乙烯释放量、固酸比、失重率、丙二醛(MDA)和1N KOH可溶组分含量呈线性负相关;而与果胶甲酸酶(PME)、β-半乳糖苷酶、超氧化物歧化酶(SOD)、过氧化物酶(POD)活性和水溶性果胶(WSP)含量无线性关系.硬度Y=546.94—6.22X1-285.18X2—6.90X6 618.58X-160.79X10-0.05X12 208.76X15 119.98X18其中X1:PG;X2:Cx;X6:乙烯释放量;X8可滴定酸含量;X10:失重率;X12:POD;X15:CSP;X18:4N KOH可溶组分].

Abstract:The changes of 20 items of physiological and biochemical behavior of postharvested `Daqing' (Prunus mume Sieb et Zucc)were analyzed with some biomathematical methods. The experimental results indicated the firmness was postively linear correlated with the content of TSS,titratable acid, chelator soluble pectin,sodium carbonate soluble pectin, 4N KOH soluble and 4N KOH insoluble components;and negatively linear corrdlated with the activity of PG,Cx,respiration rate,ethylene evolution,solid/acid,weight loss,MDA and 1N KOH soluble component content; but not linear correlated with the activity of SOD,POD,PME,β-galactosidase and the content of water soluble pectin. Firmness=546.94-6.22X1-285.18X2-6.90X6+618.58X8-160.79X10-0.05X12+208.76X15+119.98X18.(X1:PG;X2:Cx;X6:ethylene evolution;X8:titratable acid;X10:weight loss;X12:POD;X15:chelator soluble pectin;X18:4N KOH soluble component)
