硝酸盐在不同蔬菜中的分布及影响因素

摘    要:对硝酸盐在不同蔬菜中的含量及分布进行了测定 ,并对其中硝酸盐和氯及不同金属元素之间的关系进行了研究 ,结果表明 :硝酸盐在不同蔬菜中的含量差异很大 ,它主要积累于根菜类、叶菜类 ,其次为豆类、葱蒜类、瓜类 ,在茄果类、薯芋类蔬菜中含量最低。硝酸盐在同种蔬菜不同组织中的含量不同 ,其中根 >茎 >叶柄 >叶片。不同蔬菜 (除叶菜类 )积累硝酸盐和氯化物的能力几近相反。蔬菜中的硝酸盐和其体内 Zn2 的含量之间有着明显的负相关 ,而和其中的 Cd2 含量间有着明显的正相关关系

Abstract:The Levels and distribution of nitrate in vegetable samples were studied.The relationship among nitrate to chloride and different metals was involved.It was shown that nitrate concentrations were significant different in different vegetables,and it accumulated mainly in root vegetables,leaf vegetables,next in legumes,scallions and in gourds,lowest in egg plants and yam.The levels of nitrate in various vegetable tissue were found different,i.e. roots>stems>petioles>leaves.Except for leaf vegetable,accumulation of nitrate and chloride has almost adversary relationship.There was significant negative correlation between nitrate levels and zinc levels in vegetables,and significant positive correlation between nitrate levels and cadmium levels.
