氮和钾对蔬菜营养品质效应的研究进展

摘    要:蔬菜是人们生活中重要的植物性食品,其营养价值与营养成分的含量密切相关.氮和钾是蔬菜生长的营养限制因子,二者合理施用能促进蔬菜的生长,提高产量,改善蔬菜的营养品质.本文论述了氮肥、钾肥对蔬菜营养品质(维生素C、糖分、氨基酸)的影响,探讨了氮和钾的交互作用及其对蔬菜营养品质成分的效应,以期为氮肥、钾肥的合理施用和蔬菜的优质高产提供依据.

The Effect of N,K Fertilizers on Vegetable Nutrient Quality

Abstract:Vegetable is the indispensable foodstuff in our daily life and there is an obviously correlation between nutrient quality and nutrient component of vegetable. The nutrient limiting factors for vegetable growth was N and K. The proper use of them was beneficial to promote its growth,yield and nutrient quality.This paper mainly reviewed the effect of N, K fertilizer on nutrient quality (Vitamin C, Sugar,Amino acid) of vegetable,and discussed the interaction between N and K and their effect on vegetable nutrient quality in order to produce high yield and fine quality of vegetable and right use N and K fertilizer.
