| 摘 要： | 以栀子为原料提取天色食用色素，并对其理化性质进行了测试研究，研究表明：其色素在一定条件下具有较高的稳定性，是一种性质优良的黄色素。

| Abstract: | We have extracted natural edible pigment from gardenias and made some research about its physico-chemical properties. Our research shows that the pigment extracted from gardenias is a pigment of fine quality and has comparatively high stability under certain conditions. |
