摘    要:用醋酸降解壳聚糖,得到不同降解度的样品,研究不同相对分子质量的壳聚糖对草莓涂膜保鲜效果的影响.结果表明,相对分子质量为3.66万和1.37万的两种壳聚糖膜,以及按1∶1配比所制得保鲜剂对草莓有较好的保鲜效果,能使果实的腐烂率和发霉率显著降低,常温下,可延长保鲜期两天以上.

Abstract:Chitosan was degraded with acetic acid. The effects of various molecular weight chitosans on strawberry preservation were studied at normal temperature. The results showed that 36.6 thousand and 13.7 thousand molecular weight chitosans and their mixture at mass ratio of 1:1 has good effects on strawberry preservation. It decreased the rate of mildew and putridity of strawberry. At ambient temperature, the storage life of the treated strawberries was 2 days longer than that of untreated strawberries.
