芭蕉芋开发研究

摘    要:对芭蕉芋干片、芭蕉芋淀粉的成分、微量元素含量、氨基酸组成以及糊特性作了分析,表明芭蕉芋是一种新型的优质的淀粉资源。对芭蕉芋淀粉的变性(接枝共聚物和阳离子淀粉)作了初步探讨,表明芭蕉芋变性淀粉的某些性能优于玉米变性淀粉。

Abstract:The analysis of canna edulis ker dry flakes and canna starch (its ingredients, food ingredients, contents of trace elements, constituents of amino acids as well as its physical and chemical properties and paste characteristics) proves that canna starch is a new source of topquality starch. A study was made on its modification, that is the grafting copolymer and cationic starch of canna starch. The result shows that some properties of canna starch are superior to those of corn starch.
