摘    要:香菇是一种高蛋白、低脂肪的保健食品.它含有多种氨基酸,丰富的维生素以及人体不可缺少的宏、微量元素.具有很高的药用价值.我们利用原子吸收光谱法对鲜香菇中的7种宏量、微量元素进行了含量测定.其中K、Na、Fe、Mg、Ca含量高,Mn、Cu含量也比较丰富.

Abstract:Forese Mushroom is high protein and low fat sanitarian food. It contains multi - amino acid and abundant vitamine as well as indispensable trace and macro elements in human. It has higher medicine value. In this paper, the seven macro,track elements of Forese Mushroom were determined by FAAS. The results showed there were higher contents elements in it, such as K, Na , Fe , Mg ,and Ca, and the copper and manganese contents were ample also.
