摘    要:饮料中总酸量测定,多用中和滴定法和电位滴定法,但是,有色饮料难以准确判断滴定终点,混合弱有机酸的测定,用电位滴定法,滴定突跃也不明显,而且各种不同品种的饮料其滴定突跃的pH范围相差较大,难以与作为标准的柠橡酸的突跃范围一致。

Abstract:The indirect determination of total acidity of beverage as well as the influencing factors have beea studied by Differential Pulse Voltammetry with Ag-Hg memberane electrode. The comparative tests with Neutrodyne and Potentiometric Titration have also been done. Some shortcomings in Neutrodyne and Poteutiometric Titration have been found. The resets show that the method as more convenient, accurate and sensitive than others.
