摘    要:淀粉酶值是蜂蜜卫生检验中的重要检测项目之一,其活性的高低是衡量蜂蜜成熟度、加热程度和贮存时间的重要指标,而试管比色法被广泛应用于高等院校实验教学中用以检测淀粉酶的活性。针对该方法在实验教学过程中出现的不同问题分别进行了探讨。

Abstract:Amylase value is one of important items of honey inspection. The amylase activity is a key indicator to measure the maturity, heated extent and storage time of honey. Method of test-tube eolori- metry is widely used in experimental teaching to detect the activity of amylase in university. Issues of test-tube colorimetry appeared in experimental teaching processes are discussed in this paper.
