高山无公害蔬菜与平原一般蔬菜栽培和营养成分的比较

摘    要:为了解高山无公害蔬菜营养的优劣及其原因,对高山无公害蔬菜与平原一般蔬菜的栽培和无机营养元素,蛋白质,脂肪,总糖,维生素及纤维等营养成分进行了分析比较,结果表明,4种高山无公害蔬菜的Ca,Fe,P .维生素和蛋白质含量均较高,这与高山气候-雾日雨量增多,增施有机肥和优良的环境质量密切相关,高山无公害蔬菜基地宜选山顶的缓坡地,山凹平地,宜种植地下茎,根用和果用蔬菜种类,其田块“三改”,施肥“五改”和生产与销售的“五个统一”管理均不同于平原一般蔬菜,发展高山无公害蔬菜具有广阔的前景和较高的经济效益,是高山区农民致富的途径之一。

Abstract:For understanding the nutrient components of mountain uncontaminated vegetables (MUV) are high or low,and their reasons.The authors gave a comparative analysis on Ca, Fe,P,Protein,total sugar,fat,fibre and Vitamine between MUV and general vegetables.The results showed that Ca,Fe,P,Protein of 4 MUV are higher than that of general vegetables, which were relative to mountain climatic feature——more fog days and much rainfall, and more fertilized organic fertilizer and good environmental quality of mountain region closely.MUV base don′t choose the top of mountain as cultivated land, but gentle slope and saddle; plant vegetable species such as subterraneous stem、root and fruit use vegetables. Their 3 reforms of cultivated land,5 reforms of apply fertilizer and 5 unity of cultivating and selling of MUV are different from that of general vegetables.The development of MUV has broaden prospects and higher economic benefit, and give also a shortcut of getting rich for the mountain region.
