牡丹籽油成分分析及其抗氧化活性研究

摘    要:针对脂肪酸类成分、微量元素以及影响油脂品质的主要理化指标进行分析测定,并利用体外模型考察抗氧化能力,以评价牡丹籽油的营养及保健价值.结果显示,其中不饱和脂肪酸含量达90.74%,以亚麻酸为主,占39.47%;油酸和亚油酸分别占24.11%和27.16%.牡丹籽油同时含有K、Fe、Zn等多种人体必需微量元素,而Pb、As等有害微量元素含量均低于检出限.供试牡丹籽油的酸值、过氧化值、碘值和皂化值分别为1.866mg/g、9.574mmol/kg、173.4g/100g、188.1mg/g,符合国家标准限度规定;对DPPH自由基清除作用的EC50为29.30mg/mL,显示良好的抗氧化潜力.研究结果提示,牡丹籽油具有较高的营养价值和保健功能,是一种优质天然植物油料资源,极具开发和利用价值.

Abstract:To evaluate the nutrition and health care function of peony seed oil for deep development, its composi- tion of unsaturated fatty acids and microelements has been investigated along with several major physicoehemical in- dexes concerning with oil quality. Moreover, antioxidant activity is assessed by the DPPH radical scavenging assay. The results show that the test oil is rich in unsaturated fatty acids, which occupy 90.74% of the total fatty acids and mainly consist of linolenic acid, octadecenoic acid and octadeeadienoic acid. The oil also contains various necessa- ry microelements with proper contents, in addition, the contents of main harmful elements are under the detection limit. All the physicochemical indexes tests meet the national quality standard system for vegetable oil. The oil dis- plays potent scavenging effect on DPPH radical with an EC50 of 29.30 mg/mL. The present results from present study indicate that peony seed oil is a good natural oil resource with high nutrition and health-protecting function.
