收获后存放时间对三叶草叶蛋白提取率的影响

摘    要:用直接加热法提取不同存放时间的白三叶草叶蛋白并对提取率进行对比分析.结果表明,白三叶草收割后,存放0 h、24 h、48 h、72 h后,叶蛋白质提取率分别为4.247%、2.517%、2.135%、1.992%,叶蛋白提取率存在显著性差异(P<0.01).随着存放时间延长,叶蛋白提取率逐步降低,在24 h内下降最快.因此,收获后的三叶草应尽快加工,缩短存放时间.

Abstract:Leaf protein(LPC) of the white trefoil deposited in different time were extracted through the direct heating method,and LPC extraction rate were comparatively analyzed between them.The result showed that the LPC extraction rates were repactively 4.247%,2.517%,2.135% and 1.992% for the white trefoil stored with 0h,24h,48h and 72h after harvested.With the extension of storage time,LPC extraction rate decreased gradually,and fell at the fastest in stored for 24 hours.
