| 摘 要： | HACCP是能显著提高食品安全的一种有效预防控制系统.为保证禽蛋产品质量安全,将HACCP应用于禽蛋生产.文章分析了禽蛋生产过程中每个环节可能造成的潜在危害,以确定影响产品质量的关键控制点(CCPs),并针对每一个CCP制定出相应的监控措施,将生产过程可能存在的潜在危害因素降低到最低程度,预防不安全因素造成对禽蛋的危害,保证产品的安全性.

| Abstract: | HACCP is a management system in which food safety is addressed through the analysis and control of hazards.In order to improve the quality of egg,HACCP system is introduced and discussed in the whole production process of egg.CCPs is assured that will affect the sanitary quality of egg and corresponding precaution is established according to every CCP.In order to ensure food safety,we establish complete monitoring system to minimize the significant hazards that exist in the processing. |
