西宁地区市售酸奶乳酸菌含量的测定及卫生评价

摘    要:为了解西宁地区市售酸奶乳酸菌含量及其卫生情况,按国标规定的方法对45份西宁地区市售保质期内的酸奶进行了乳酸菌数和卫生指标菌的测定。结果显示:45份检样乳酸菌数的合格率为88.22%;卫生指标菌中大肠菌群的合格率为97.78%,金黄色葡萄球菌的合格率为100%,酵母菌的合格率为17.78%;检样各指标总合格率为13.33%。

Abstract:In order to determine contents of lactic acid bacteria in marketed yoghurt and its hygienic appraisal in Xining area,the contents of lactic acid bacteria and the hygienic target of 45 marketed yoghurt in the nature time in Xining area were examined, following the stipulated method. Result in- dicated that in 45 gamples,the qualified rate of lactic acid bacteria' s number was 88. 22%. In the hygienic target bacteria the coliform bacteria' s qualified rate was 97.78%, the staphylococcus anreus's qualified rate was 100% ,yeasts' qualified rate was 17.78% ;The total qualified rate of 45 sanrples was 13. 33% ,according to all detection of indicators.
