短梗霉多糖的分离纯化及对绿茶中茶多酚的保护作用

摘    要:用 Savage法纯化并用薄层层析法鉴定短梗霉多糖 .用 Folin-酚法测定其含蛋白量为0 .5% ;用粘度法测定其分子量为 490 0 0 .用该糖对绿茶进行涂膜保存并跟踪测定绿茶中茶多酚的含量 ,结果表明 ,短梗霉多糖对绿茶中的茶多酚有较好的保护作用 .

Abstract:Pullulan purified by means of savage and indentified by thin plate chromatography contains 0.5% protein. The viscometry indicated that the molecular weight of pullulan is 49 000. Green tea coated with pullulan was kept under certain conditions, and the percentage of its polyphenol tea was determined continously. The result reveals that pullulan provides protection for polyphenol tea efficiently.
