| 摘 要： | 综述了三聚氰胺的分析方法,对分析方法的原理和过程给予了详细介绍。旨在说明奶制品中蛋白质含量分析结果与真值不符来源及原因。奶制品中共存的三聚氰胺分析方法可以改进和提高,但不能彻底解决食品安全问题。

| Abstract: | In this paper,analytical methods for melamine were reviewed,the detection mechanisms and procedures were elucidated.My purpose is to describe the error source of protein determination in milk products,and the reason why melamine coexisted in it.Analytical methods could be developed for melamine but the problem of food safety could not be solved with chemistry methods. |
