红曲色素稳定性研究

摘    要:本文研究了温度、pH、光照、金属离子对作者通过液体发酵法所得的红曲色素包括红曲黄色素和红由红色素稳定性的影响,结果表明红曲黄色素在酸性条件下比较稳定。红白色素的耐热性较差,红白色素受室内自然光的影响较小,但在室外自然光的直射下失色严重。Fe3+,Fe2+对色素的稳定性影响较大,其它金属离子的影响较小。

Abstract:The effects of temperature, pH, sunlight, metal ions on stability of Monascus pigment including Monascus yellow and red pigment produced by submerged fermentation of Monascus by the authors were studied.The results showed that Monascus yellow pigTnent was relative stable under acid condition, butthe resistence of Monascus pigment against heat is comparative poor. It was found that Monascus pigment received less influence from natural sunlight indoor, but its colorness was reduced greatly under direct shining outdoor. The results demonstrated that Fe and Fe exerted an obvious effect on stability ofMonascus pigment while the others have few effect on it.
