汕头地区咸菜中亚硝胺前体含量检测

摘    要:广东汕头是我国食管癌高发区之一其中南澳县是高发区,潮安县是中发区、惠来县是低发区,各县居民普遍整年都吃自己腌制的“咸菜”。为了解食物因素和食管癌的关系,我们对汕头地区“咸莱”中的亚硝酸盐、硝酸盐和二级胺含量做了检测,结果表明,高发区咸菜中亚硝酸盐的含量明显高于中、低发区;且咸菜中含有二级胺,因此咸菜和食管癌发生的关系,值得进一步探讨.

Abstract:Shantou Prefecture of Guangdong Province is one of the high incidence regions of esophageal carcinoma in our country.Within the pre- fecture,Nan'ao County is the highest incidence area,Chao'an County the medium incidence area and Huilai County the low incidence area.The people in these counties generally eat pickled vegetables all the year round. To have a knowledge of the relation between food factors and esophageal carcinoma,we have made adetermination of the nitrite,nitrate and secon- dary amine contained in pickled vegetables of Shantou Prefecture.The result showed that the nitrite content in pickled vegetables at the high incidence area was remarkably higher than those at both the medium and the low incidence areas.Pickled vegetables contain secondary amine and therefore the relation between pickled vegetables and the occurrence of esophageal carcinoma merits further exploration.
