共轭亚油酸的氧化稳定性研究

摘    要:共轭亚油酸(CLA)是亚油酸衍生的共轭二烯酸的所有异构体的总称,它是具有许多重要生理功能,如抗癌作用,抗粥状态动脉硬化,参与脂肪分解,调节新陈代谢等。本实验采用恒温洪箱法对碱碳化共轭,非内化共轭两种方法合成的CLA产品进行了氧化稳定性检测,结果表明CLA产品的氧化稳定性比其原料红花油要好地多,加入0.02%TBHQ则更进一步提高了产品的氧化稳定性。

Abstract:Conjugated linoleic acids (CLA), a group of conjugated dienoic derivatives of linoleic acid, have several important physiological functions, such as anti carcinogenic and anti atherogenic properties, reducing body fat, etc. CLA can be synthesized by heating safflower oil in the presence of alkali or other kinds of catalysts. This experiment investigated the oxidation stability of CLA using the Schaal oven method. The results show that CLA are much more stable than their raw material, safflower oil, and 0.02% TBHQ furthermore can improve their oxidation stability.
