花色苷抗氧化性研究进展

摘    要:花色苷作为-种天然色素,具有良好的抗氧化性.笔者综述了常用的研究花色苷体内抗氧化性的研究方法,例如DPPH(2,2-diphenyl-1-pierylhydrazylradical)、ORAC(oxygenradicalabsorbancecapacity)、ABTS(2,2’-azinobis3-ethylbenzothiazoline-6-sulfonate)等.并综述了近年来花色苷体内抗氧化性的研究进展.最后对未来的研究提出了展望.

Abstract:Anthocyanins as a natural pigment has a good antioxidant activity. The methods for detecting the antioxidation activity of anthocyanins in vitro were discussed such as DPPH, ABTS, ORAC and so on. This paper also gives a general account of experiments which studied the antioxidation activity of anthocyanins in vivo in recent years. Finally, prospect for future research is given.
