预糊化淀粉的研制

摘    要:介绍以木薯淀粉为原料,喷雾干燥工艺制各预糊化淀粉的方法。通过对产品的粘度、水份含量、粒径、视比重、膨松度以及复水性等指标的检测,探讨淀粉浆浓度和pH值、糊化pH值、添加抗老化剂、膨松剂以及充N2喷雾等对制备预糊化淀粉的影响。

Abstract:The article introduces method of manufacturing pregelatinized starch from cassava starch by spray-drying. Through determinating the index of the product such as viscosity, water content, average size,apparent specific gravity, loose degree and redissolubility, we explore the influence factors such as starch slurry density and pH, gelatinizing pH,adding age-inhibiting and loose agents,adding full nitrogen gas in the spray-drying on the preparation of pregelatinized starch.
