酿酒葡萄理化成分因子分析

摘    要:酿造优质葡萄酒与原料葡萄品质有重要的关系,对酿酒葡萄质量的评价,传统的人为感官评价方法主观性强,且不适合大批量产品评价,理化指标是酿酒葡萄品质评价的有效依据.以红色酿酒葡萄为例,应用主成分分析方法对其理化指标进行因子分析,选取评价指标的主成分,经因子旋转后确定葡萄品质理化评价指标.

Abstract:There is an important relationship between the quality of raw materials of the grapes and the brewing of the quality wine. As for the evaluation of the quality of wine grapes, on the one hand, it is too subjective by using the traditional artificial sensory evaluation method; on the other hand, it is also not suitable for high-volume product reviews, so the physical and chemical indicators are regarded as effective basis in the evaluation of the quality of wine grapes. By choosing the red wine grapes as an example in this paper, we use the principal component analysis method to apply factor analysis on its physical and chemical indicators, and select the main components of the evaluation indicators to apply factor rotation, and then we can finally get some effective physical and chemical evaluation indicators to determine the quality of grapes.
