酶法提取海洋下杂鱼液化蛋白质的研究

摘    要:用海南岛低值下杂鱼酶法降解提取液化蛋白工艺进行了初步探讨.结果表明,利用本岛热带作物中提取的蛋白酶可直接用于海产品的加工.此液化蛋白质溶解性能好,品质优良,氨基酸品种齐全、含量高,可直接应用于食品及医药工业.

Abstract:This article discusses an initial experiment on extracting liquefied protein from low cost fishes of Hainan island through degradation with enzyme.The result shows the proteinase extracted from tropical products can be directly used in the processing of aquatic products.This kind of liquefied protein has a high solubility and high quality.It is rich in amino acid and can be used directly in both food and medical industry.
