摘    要:"民以食为天,食以味为先",调味品是食品的灵魂,凡是加工食品或烹调食品几乎都离不开调味品。花椒——"八大调味品"之一,它含有丰富的生物活性成分,具有广阔的应用前景。本文综述了花椒的生物活性成分及其应用。

Abstract:"It is of great importance of eating and wether the food is delicious or not depends on taste".Spices are the soul of food,all processed foods or cooking food almost inseparable from the condiment.Zanthoxylum bungeagum Maxim is one of the eight condiments,it is rich in bioactive components and it has broad application prospects.This paper reviews the biological activity of the Chinese prickly ash components and their applications.
