摘 要: | 通过建立高压脉冲电场解冻装置,进行了冰的解冻试验.利用实验数据分析结果,揭示了在高压脉冲电场作用下对冰水相变的加速作用及其规律,并对此规律的机理进行了探讨.

Abstract: | Through the compare of the high voltage pulse thawing equipments, the most proper equipment has been founded. The acceleration rule and the principle of the food thawing, under the high pulse electric field(HPEF), has been studied by analyzed the data of ice thawing processing. |
