| 摘 要： | 聚合酶链反应(PCR)技术,现已在医学工程、疾病诊断、遗传工程、考古学及法医学等领域得到广泛应用,由于该技术具有灵敏、特异、产量高、速操作简便和容易自动化等突出优点,因此,也被应用于食品检验.本文就PCR技术的原理及在食品卫生检验中的应用作一综述.
