| 摘 要： | 红曲中含有丰富的红曲色素，通过一系列实验，对不同提取剂、温度、时间，以及ｐＨ值等工艺条件对提取率的影响进行了研究，在上述基础上确定了红曲色素提取的最佳工艺条件，红曲色素提取率达到了原料质量的６６％。

| Abstract: | The red kojic rice has a rich content of red kojic pigment. The influence of solvent, temperature, time and pH on the extract rate has been studied by a series of experiments. A suitable extract procedure is recommend. The best extraction rate of the pigment is 6.6%. |
