Abstract:Summary The effect of ante-mortem i.m. administration of oxytocin on post-mortem muscle metabolism in Pietrain pigs was examined. Treatment with oxytocin significantly retarded post-mortem glycolysis and stopped the production of pale, soft, exudative meat.
