摘    要:采用传统方法酿制的陈醋由于自身成分复杂,色泽黑紫,采用普通指示剂酸碱滴定法测定总酸,终点颜色变化易被其本色掩盖。文章采用pH计指示电位滴定法进行测定,具有设备简单、操作简便、精确度高等优点,减少了人为因素带来的影响。

Abstract:The color of the vinegar brewed in a traditional way is black and purple. If the Acid-Base Titration is adopted to determine the total acid, the change of the final color is easily covered by the original one. This paper suggests using the Potentiometric titration, which may simplify the process and improve the degree of certainty and reduce the negative effects brought by mankind.
