地木耳营养价值及利用潜能研究

摘    要:对地木耳经过3年的调查研究,确认它的营养丰富,可与木耳相媲美,在蛋白质、钙、铁、Vc等的含量上甚至超过木耳和银耳,具有一定的医疗保健价值。地木耳适应性强,分布广,资源潜力大,应充分开发利用。地木耳可食,还可作为食品添加剂。

Abstract:As a kind of the resources of latent wild food, Nostoc commune Vauch. has not been applied and studied in China. After three year's investigating and studying, the authors affirmed that it has rich nutrition and is edible as good as wood ear. The content of nutrition in protein, calcium, iron and Vc is much richer than that of wood ear and Jelly Fungus. It is valuable for medical treatment and good health. Nostoc commune Vouch. has strong adaptability. It is widely dispersed over our country. It is rich in latent resources. If we fully exploit and make full use of it, the economic benefit is considerable. It can be cooked into soup, dishes and stuffing for dumplings, and can be used as a kind of instant food and additive of intensified food.
