天然活性物质调控鸡蛋胆固醇的研究进展

摘    要:作为人们最常食用的蛋品,鸡蛋中胆固醇含量水平也影响着人类的健康。研究发现,黄酮类、植物甾醇类、多糖类、其它植物及植物提取物等天然活性物质都能显著降低鸡蛋中胆固醇浓度,是天然的蛋鸡营养调控物。将主要介绍天然产物添加剂在调节鸡蛋胆固醇上的应用效果。

Abstract:As common food, egg with its cholesterol content may affect human heahh. The results showed that natural active substances could reduce significantly the concentration of egg cholesterol, such as flavonoids, phytosterols, polysaccharide, other plant and plant extracts and so on. It proved to be the very effective nutrition regulator for laying hens. In this study, the application effect of egg cholesterol regulated and controlled by the additive of natural active substances was introduced.
