| 摘 要： | 对广西北海、浙江乐清湾和山东乳山湾的3个野生种群和1个养殖种群泥蚶肉的游离氨基酸和无机元素进行了比较研究,结果表明:养殖泥蚶的风味并不亚于野生泥蚶,不同种群泥蚶肉含有丰富的游离氨基酸和无机元素,泥蚶体内As、Cd、Cu、Pd的含量均符合标准。

| Abstract: | This paper is a comparative study on the free amino acid and inorganic element of one cultivated Tegillarca granosa population and three wild Tegillarca granosa population in North Sea of Guangxi, Yueqing Gulf of Zhejiang and Rushan Gulf of Shandong. It is concluded that the flavour of the cultivated Tegillarca granosa are as good as the wild ones, the Tegillarca granosa in different populations are all rich in free amino acid and inorganic element, and their element quantities of As, Cd, Cu, Pd all meat the standards. |
