温州盘菜贮藏期间生理生化变化的研究

摘    要:研究了温州盘菜贮藏期间含水量、电导率、丙二醛含量的变化及超氧化物歧化酶活性的变化 ,并应用聚丙烯酰胺凝胶垂直平板电泳技术对不同储藏期温州盘菜的超氧化物歧化酶同工酶进行了研究。结果表明 :随着贮藏期的延长 ,温州盘菜的含水量下降 ,盘菜块根浸泡液的相对电导率增大 ,丙二醛含量增加 ,超氧化物歧化酶的活性降低 ,同时超氧化物歧化酶同工酶谱带也有消失现象

Abstract:The change of the water content, conductivity, MDA content and the activity of SOD of turnip of Wenzhou during storage was observed. And the isoenzyme of SOD of turnip of Wenzhou in different storage was studied by means of polyaczylamide gelelectrophoresis on vertical slab. The results indicate that during the process of storage the water content decreased, the relative conductivity of the soaked succus of root tubers of turnip of Wenzhou increased, the activity of SOD decreased but the MDA rised. Meanwhile, the isoenzyme of SOD has disappeared. And the isoenzyme of SOD of turnip of Wenzhou in different storage was studied by means of polyaczylamide gelelectrophoresis on vertical slab.
