方便茶片成型工艺的研究

摘    要:方便茶片是为了满足日益增长的市场需求而研制的一种茶叶深加工产品.本研究就其成型工艺及技术条件作了实验探讨,表明方便茶片的制片压力、温度、含水量及添加剂的量影响成品的表面质量和泡化分散效果;而茶汤的风味和质量则主要受添加剂的影响.

Abstract:Instant tea-tablets,a kind of further processed product of tea,are developed for an expanding demand in market.This research discusses the processing and technological conditions in tea-tablets molding,and it shows that the pressure,temperature,water contents and quantity of additional agents in tabletting will effect the surface quality of tea-tablets and their alveolation & dispersion rate.And yet the additional agents will mainly have an effect on the flavor and taste of tea-soup.
