化学计量学在食品分析中的应用

摘    要:简述了化学计量学、分析化学和食品分析三者之间的关系和各自的任务。评述了化学计量学中的多元校正、化学模式识别和人工神经网络等方法在食品营养成分分析、无机元素分析、维生素分析、有毒有害物质分析、分类和质量鉴别及某些过程分析领域中的应用。重点介绍了最小二乘法和偏最小二乘法在食品分析中的应用。同时,对该领域的研究方向和前景进行了展望。

Abstract:The relationship and task among the analysis of food,chemometrics and analysis chemistry are outlined.The application of some filed in the analysis of nutrient components,vatamin,substance of harmful and poisonous,inorganic element,some production course as well as classification and quality discrimination in food are reviewed about the methods which multiple correction,pattern recognition,and artificial neural network in the chemometrics. CLS and PLS are mainly introduced.Meanwhile,the prospect and trends of chemometics in the analysis of food are also discussed.
