微波对抗坏血酸稳定性影响的研究

摘    要:探讨了微波辐射对抗坏血酸稳定性的影响.实验结果表明用微波辐射抗坏血酸水溶液后,随微波辐射时间的增加抗坏血酸的浓度损失率逐渐增大;同时从实验中也总结出了在不同pH条件下抗坏血酸受到微波辐射后损失率变化的规律.

Abstract:This article discussed the influence of microwave radiation on ascorbic acid's stability. The experimental results showed that, with the increase of the time of microwave radiation on ascorbic acid, the loss rate of the ascorbic acid concentration would increase. And the rule of ascorbic acid loss rate by microwave radiation under different acidity was concluded from the experiment.
