摘    要:以辣椒为原料提取的天然色素在食品、药品中的应用,在国外已经运行多年,但在国内尚处于初级阶段。本研究探讨了辣椒红色素在食品、医药行业中的应用,总结了所采用方法以及获得的结果。

Abstract:The application of natural capsanthin extracted from capsicum annuum as amaterial hasbeen developed several years,but in our nation it still being in its intial stage.The application ofcapsanthin in the fields of food and medicals is discussed and the method adopted as well as resultsobtaincd were reported.
