| 摘 要： | 对从大豆脱臭馏出物中提取的生育酚浓缩物,分别在80、100、130℃下用电导法(OSI法)及在63±2℃下用烘箱法对其抗氧化活性和其它抗氧化剂作了比较研究.结果表明,其抗氧化活性远强于合成的α-生育酚,在63±2℃的烘箱中和BHA基本相当,在100℃的OSI实验中其抗氧化活性和BHT基本相当,略弱于TBHQ,并且在100℃猪油中浓度高达0.32%时未表现促氧化现象.

| Abstract: | Antioxidant activity of the tocopherols separating from soybean oil deodorized distillation was compared with other antioxidants by using OSI method at 80 ℃, 100 ℃ and 130 ℃, and using Schaal oven method at 63±2 ℃. The results show that the product is more a potent antioxidant than synthetic α-tocopherol . The product has similar antioxidant activity with BHA, but is slightly less potent than TBHQ when tested by OSI method at 100 ℃. |
