| 摘 要： | 本文阐述了我国麦胚资源丰富，但未得以充分利用的现状，列举了麦胚的主要营养素（蛋白质、脂肪、维生素、矿物质）的含量及其生理功能，介绍了小麦胚的提取方法，概要说明了麦胚可能制成的数种麦胚强化营养食品的生产工艺，指出了有效利用麦胚是一个既有经济效益又有社会效益的项目。

| Abstract: | The existing situation of abundant wheat germ resources and inefficient utilization in our country is described. An exposition of the content of nutrients in wheat germ(mainly protein,fat, viamin and minerals) and their physiological functions is made. A methed of germ extraction is introduced. Some productive technology of wheat germ enhanced foods are outlined. The social and economic benefits of efficient utilization of wheat germtis pointed out. |
