固定化果糖基转移酶的理化性质及稳定性研究

摘    要:果糖基转移酶(FTS)能有效地把蔗糖转化为蔗果低聚糖,我们比较研究了从诱变的米曲霉GX0010菌株提取的果糖基转移酶(FTS)和固定化果糖基转移酶(IFTS)的理化性质及其稳定性,结果表明:两者的最适PH为5.5,IFTS比FTS的适宜温度范围扩宽了,而且IFTS的酸碱稳定性,热稳定性和贮存稳定性明显提高,间歇式生产时IFTS的使用半衰期为54次。

Abstract:Fructosyltransferase (FTS; EC 2.4.1.9) converts sucrose effectively to fructoolingosaccharide (FOS).The catalytic properties of immobilized fructosyltransferase (IFTS) were investigated and compared with those of extracted fructosyltransferase from mutagenesed Aspergillus oryzae GX0010.It was found that both free and immobilized FTase have the optimum pH of 5.5. But the Ph stability and the thermal stability and bin stability of IFTS increased substantially.The halflife of IFTS is 54 times in batch operation.
