大豆异黄酮抑菌活性的研究

摘    要:从大豆乳清中提取出大豆异黄酮,对其抑菌活性进行了研究.通过滤纸片法对3种浓度(0.3mg/mL、0.6mg/mL、0.9mg/mL)的大豆异黄酮提取液进行了抑菌试验.结果表明,大豆异黄酮对大肠杆菌、金黄色葡萄球菌和啤酒酵母都有一定的抑菌效果,随着大豆异黄酮浓度的增加,其抑菌作用也增强.3种浓度的大豆异黄酮溶液对黑曲霉都没有抑菌效果.

Abstract:Antimicrobial activity of soybean isoflavones extracted from soybean whey was studied in this paper. By filter paper method, antimicrobial activities of soybean isoflavones of three kinds of concentrations (0.3 mg/mL?0.6 mg/mL?0.9 mg/mL)were experimented. The results showed that Soybean isoflavones showed antimicrobial activity to Escherichia coli, Staphylococcus aureus and Saccharomyces cerevisiae, but they had no antimicrobial activity to Aspergillus niger. With the increase of concentration of soy isoflavones, the antimicrobial ability to Escherichia coli, Staphlococcus aureus and Saccharomyces cerevisiae also increased.
