紫外线诱变筛选抗双乙酰和低H_2S合成能力啤酒酵母的研究

摘    要:利用紫外线分别对龙轻16和QB_1两种啤酒酵母进行诱变,并通过双乙酰和醋酸铅的酵母CM培养基进行筛选,选出了抗双乙酰和低H_zS合成能力的菌株,这样的菌株用于生产可以改变啤酒的口味,也可做为己标记的菌株,用做原生质体融合的出发菌株,进一步进行高种研究。

Abstract:The yeast strains with diacetyl-resistance and the yeast strains with low synthesis ability are obtained by U. V. mutagenizing Longqing 16 strain and QB1 strain respectively and screening separately on the CM medium containing diacetyl and the CM medium containing lead acetate after the mutagensis. The flavour of beer can be improved if the two kinds of strains selected are used to produce beer. They can also be used as the parental strains of protopast fusion for further studies on the breeding.
