Abstract:Summary Maltol inhibited growth and lactic acid synthesis byLactobacillus casei. The inhibition was partially overcome by the addition of casein hydrolysate and yeast extract. Some amino acid mixtures were also effective, among which glutamic acid was able to reverse the inhibition completely.
