JA_3保鲜刺梨的研究

摘    要:天然食品添加剂──JA3作保鲜剂对鲜刺梨果进行涂膜处理后于室温下贮藏,分别对利梨进行了失重、感官和Vc含量的检测,证明采用0.3%JA3涂膜液对刺梨有较好的保鲜效果。在刺梨保鲜剂中优于用海藻酸钠和蔗糖脂肪酸组成的保鲜剂。

Abstract:Roxburghii Trait was soaked in a solution of JA3 a natrual food addition agent, to form a coating on the surface of the fruit. And its weight loss, sense and the content of Vc were measured during stroage at room temperature. Investigation of storage showsthat a solution of 0. 3% JA3 is best. Effects of the coating agent are better than the solution consisted of sodium alginate and sucrose fatty acid ester.
