水杨酸、水杨酸甲酯对亚硝胺合成阻断作用研究

摘    要:用紫外光解法研究水杨酸(SA)、水杨酸甲酯(MS)对亚硝胺合成的阻断效果,并与相同条件下抗坏血酸(Vc)进行对照,探讨浓度、pH值、反应温度、反应时间对SA、MS阻断亚硝胺效果的影响.研究结果表明:反应浓度为1.28 mmol/L、pH3.00、反应温度37℃、反应时间1 h时,SA、MS对亚硝胺的阻断率最高,阻断能力依次是:VcMSSA.

Abstract:The effects of salicylic acid(SA) and methyl salicylate(MS) on blocking synthesis of nitrosamine were studied by ultraviolet photolysis,and compared with ascorbic acid(Vc) with the same condition.The effects of determination conditions such as concentrations,reaction time,pH value and ultraviolet radiation wavelengths on blocking nitrosamines by SA、MS were investigated.The results showed that:when reaction time was 1 h,pH value was 3.00,reaction temperature was 37 ℃,reaction concentration was 1.28 mmol/L,ultraviolet radiation wavelengths was 254 nm,their blocking rates could reached the highest.The blocking capability followed by:Vc〉MS〉SA.
