酒精发酵速率方程的线性化研究

摘    要:对不带搅拌的发酵罐内以葡萄糖为基质对酒精发酵细胞对数生长期和稳定期的发酵状态进行了研究。发现细胞生长期发酵速率与基质浓度间存在良好的线性关系,发酵速率方程的斜率和截距与基质初始浓度也存在良好的线性关系;在细胞生长稳定期发酵速率与基质浓度的关系,类似零级反应;随着发酵基质初始浓度的增加,发酵速率与基质浓度的线性化程度也逐步增加。并建立了只有发酵速率方程斜率和截距两个实验参数,实用范围更广的酒精发酵速率方程。

Abstract:States of fermentation at the logarithmic growth phase and stationary phase in non- agitation fermenter with glucose medium are researched. During logarithmic growth phase, the fermentation rate is good linear with glucose concentration, slope and intercept of fermentation rate equation are linear with the initial glucose. During the stationary phase, the fermentation rate is similar to zero level reaction with the glucose concentration. With the increasing of the initial glucose concentration, the linear degree is increasing. The alcohol fermentation rate equation with parameters of slope and intercept, which is simple and practical, is established.
